BREADCRUMB MEDITERRANEAN ANCHOVY FILLETS
The queen of oily fish, anchovies are fished in the Adriatic fish and in the Mediterranean basin and have an exceptional
meat. Delicious either fresh or preserved, our recipe includes a light coating of the cleaned, de-boned fillets in bread
crumbs, so as not to cover its flavour. Rapidly fried in hot oil (180° C) or baked in the oven, they are delicious as finger food.
After frying, try marinating them in a mixture of vinegar, white wine, red pepper, and onions.
